Tomato Caprese Salad




Tomato salad with basil and mozzarella does not need a recipe, simplicity is its essence. Don't make these salads if the tomatoes are not ripe and delicious because that's what this salad is all about, the taste of the tomatoes. The orange cherry tomatoes in this dish were a little burst of sweetness, the heirloom tomatoes never saw a minute in the refrigerator so just toss those very gently with chopped fresh basil, extra virgin olive oil, a light drizzle of good balsamic vinegar, salt and freshly ground black pepper.

Don't store your tomatoes in the frig unless they are very ripe and won't be used for more than a day. Leave them on a plate on the darker part of the countertop.
